Orange Chai Protein Muffins (Gluten-free)
Ingredients
- 3 cups almond flour
- ¼ – ½ cup Lakanto (or your favorite sweetener)
- 1 teaspoon baking soda
- ¼ teaspoon pink Himalayan or sea salt
- 1 Tablespoon orange zest
- 1 scoop of vanilla bone broth protein or Organixx Clean Sourced Collagens (optional)
- Spices: 1 ½-2 ½ teaspoons cinnamon, ½-1 teaspoon ginger, 1-2 teaspoon cardamom (Tip: for more intense flavor, use the higher spice amounts listed)
- ½ cup melted ghee, butter, or coconut oil
- 3 large eggs
- ¼ cup fresh orange juice
- 1 teaspoon vanilla extract
Orange Spiced Glaze (optional for sweeter muffins)
- ½ cup powdered Lakanto
- 2 Tablespoons orange juice
- 1 Tablespoon orange zest
- 1 teaspoon cinnamon
- ½ teaspoon ginger
- 1 teaspoon cardamom
Instructions
- Preheat oven to 350F. In a large mixing bowl, whisk together all of the dry ingredients. In a separate bowl, whisk together the wet ingredients.
- Add the wet ingredients to the dry ingredients and mix until well combined.
- Pour batter into greased or lined muffin pan. Bake for 16 to 20 minutes until a toothpick comes out clean when inserted into middle of muffin.
- Allow muffins to cool and enjoy!

Ingredient Highlights
Almond flour is a gluten-free flour made by grinding almonds after the skin has been removed. It’s softer and finer than almond meal which is made by grinding almonds with the skin left on.

Before I make these: By the name of the muffin--i thought there would be Chai Seeds in them. When I make them I will add some Chai seeds.
