Lemon-Honey Pear Winter Salad

Ingredients

    Lemon & Honey Dressing:


    • 3 Tablespoons local honey or pure maple syrup
    • ½ cup freshly squeezed lemon juice
    • 1 finely chopped scallion or onion (about 2 Tablespoons worth)
    • 1 teaspoon Dijon mustard
    • ½ teaspoon pink Himalayan or sea salt
    • ⅛ teaspoon cayenne pepper
    • ⅔ cup olive or avocado oil
    • 1 scoop Organixx Clean Sourced Collagens powder (optional; omit for vegan option)

    Salad Ingredients:


    • 5 oz salad greens of choice
    • 1 cup roasted pecans or walnuts
    • ¼ cup dried cranberries
    • 2 pears, peeled, cored, and sliced (can substitute apples)

    Optional Add-Ins:


    • ¼ cup shredded parmesan cheese
    • Favorite protein source such as chicken or chickpeas

    Instructions

    1. Place all of the dressing ingredients into a blender and blend up until smooth. (Or you can shake up ingredients in a glass jar with lid.)
    2. Assemble salad ingredients in a large bowl. Drizzle with desired amount of dressing. Toss together and enjoy
    3. Refrigerate leftover dressing and use throughout the week.
