Low-Carb Sardine Salad

Ingredients

  • 4.25 oz can of sardines
  • 2 Tablespoons extra virgin olive oil/mayo/yogurt (optional)
  • 1 Tablespoon chopped parsley
  • 1 celery stalk, chopped
  • 1 sun-dried tomato, chopped (about 1 Tablespoon)
  • 1 green onion, sliced or 2 Tablespoons of chopped red onion
  • ½ Tablespoon capers (or pickle/pickle relish)
  • Juice of ½ lemon (or about 1 Tablespoon)
  • ⅛ teaspoon pink Himalayan or sea salt
  • Cayenne pepper to taste (very small amount, about 1/16 tsp)

Instructions

  1. Drain and mash sardines with the remaining ingredients.
  2. Serve over a bed of your favorite greens, in a lettuce wrap, in a GF tortilla, over toast, with your favorite GF crackers, inside of an avocado, or on its own.
