Easy Homemade Vegan Butter
Ingredients
- 1 cup refined coconut oil, melted (do not use extra virgin coconut oil)
- 2 Tablespoons avocado or hemp oil
- 1/3 cup unsweetened hemp milk
- 1 teaspoon apple cider vinegar
- 1 teaspoon nutritional yeast
- 1/2 teaspoon Himalayan salt
Instructions
- Into a blender container, add melted refined coconut oil along with the avocado/hemp oil; set aside.
- In a measuring cup, add apple cider vinegar and hemp milk, stir to combine. The mixture should curdle slightly. Add this to blender container. Add nutritional yeast and salt and process in a blender until quite smooth.
- Pour into a small glass dish and refrigerate until solid.

Is there an alternative to the coconut oil? I like the idea of making my own vegan butter as I have an allergies to milk, but also have an allergies to coconut. Would love to hear of a substitute to the coconut oil.

Unfortunately, there doesn't appear to be an easy swap out for the coconut oil. There are quite different vegan butter recipes online that don't call for coconut oil, but they involve a totally different set of ingredients.

One of the reasons nutritional yeast was used in this recipe was for the color, in which case you could likely use a small amount of ground turmeric to give your vegan butter a more traditional golden look. However, we're not sure what it will do to the taste if you omit the nutritional yeast as does add some flavor.
